Delicious Contemporary Food With French Influence

 

 

 

 

 

Our chef Thierry was born and grew up in Paris, where he had his first summer job in a Parisian restaurant at the age of 15. The following autumn, he enrolled in the Cooking School of Paris, from which he graduated as a qualified chef… Thierry worked in Paris for a year before going to the Caribbean to do his military service…. 

Twelve months later, Thierry returned to Paris to work in a five star hotel. ...The following year, he decided to travel and learn English and moved to Dublin, Ireland. Thierry worked in a two star Michelin restaurant (Patrick Guilbaud) and had the opportunity to work under one of Michel Roux chef. While working in Dublin, Thierry was offered a position as a private chef in Canada during the summer of 1986. He enjoyed the life style in Canada and decided to apply for a visa and immigrate to Canada. So he moved to Toronto in 1987 and started working in the only caviar bar and restaurant (Les Martin) as a sous chef. After 5 years in Toronto, he moved to Vancouver and landed a job in the best French restaurant in the city (Le Crocodile)... He then moved to the Vancouver Club, a very exclusive private club and worked there for 4 years.

Thierry arrived in Australia in 1999 and settled in Melbourne. His first job was at Marchetti's Latin in the city, then at Felix Bar and Restaurant in St Kilda where he worked for 3 ˝ years, before a short stint at the Melbourne Oyster Bar and Restaurant. Thierry joined the Rivers Group for the opening of Blue Fire Restaurant.

In 2008 Thierry took the position as head chef at Comocean Restaurant which he purchased a few months later and renamed ficelle restaurant. Where you can now enjoy his delicious food and his friendly hospitality…
